Bleed is extra artwork that extends past the trim line so backgrounds run fully to the edge after cutting. Without it, slight cutting shifts can leave thin white slivers. The standard is one-eighth inch (about 0.125 in) per side.
It is the margin inside the trim where you keep important text and logos, so nothing gets clipped if the cut shifts slightly. Keeping content about one-eighth inch in from the trim is a safe default.
